If you are after one of the best spring destinations in Europe, where it’s more about soaking up the atmosphere and relaxing rather than checking off a list, consider a trip to Toulouse.  

Spring is when the city comes back to life, and it’s one of the best times to be here. You’ll find students sitting on the quais, enjoying picnics by the Garonne River. Terraces fill up again, and the pink bricks seem to glow even more under the blue skies. It feels local and unhurried.

You can take the cable car up the mountain, Katrin, and hike to the peak. Or check out the Imperial Palace, which is also surrounded by beautiful gardens. At the beginning of May is the Austrian tradition of putting up the maypole. That’s celebrated with traditional food and drinks at the Kurpark.
